About this place
Lagar de Varas de Fojo (also written Lagar de Varas do Fojo) is a former olive oil mill in the municipality of Moura, Beja District, in Portugal's Alentejo region. Today it houses the Olive Oil Museum (Museu do Azeite) and stands as one of the best examples of pre-industrial olive oil production on the Iberian Peninsula.
What is Lagar de Varas de Fojo?
It is a historic community-type oil mill. It did not serve a single farm: anyone with olives could bring them here to be processed. In return, a share of the oil produced was left with the mill's owner. This arrangement underpinned the local olive economy in southern Portugal for generations.
The name points to the pressing technique. "Vara" means a pole or beam in Portuguese, and mills of this kind relied on the mechanical leverage of a long beam rather than machine power.
When did the mill operate?
According to the sources, the mill worked for exactly one hundred years, from 1841 to 1941. Throughout that time oil was produced without machines, using traditional methods from before industrialization. The building kept its character after it stopped working, which made its later conversion into a museum possible.
What makes it special?
Its authenticity and state of conservation make Lagar de Varas do Fojo a rare example across the whole Iberian Peninsula. Since 1986 it has held the status of Property of Public Interest (Imóvel de Interesse Público), one of the forms of heritage protection in Portugal.
Visitors can see how oil was made before machines arrived. It is a good chance to understand where one of the region's key culinary traditions comes from.
